They tend to strike a good balance between traditional pinball sensibilities and taking advantage of stuff you can only do in a video game. If you want something more entertaining than realistic, Pinball FX2 is really good. Bumping is another thing that is just to physically nuanced for video to emulate in a good way. I mean, you're never going to emulate the real experience exactly, but some flipper skills that work in real life machines are still awkward. It may be cliche, but video pinball still has a bit more to go before coming close to emulating real life pinball. The later the port, the better it gets (PS2<360/PS3). Realism, Pinball Hall of Fame: Williams Collection is the closest so far.
